Some of you have commented on the dried apricots wrapped in bacon. Yeah, sounds weird to me too, but Mom says everybody loved them, and they disappeared real quick at Mim-may's Art Show yesterday. Mom says all you have to do is get some dried apricots and some bacon. Cut the bacon slices in half and wrap them with the bacon, and skewer them with a wooden toothpick or skewer that has been soaked in water. Mom says you can do this well ahead of time. When you are ready to cook them, put them on a baking sheet and bake them in a 400F oven for between 10 - 15 minutes. Mom puts them on paper towels a bit before she serves them. She says they are a combination of sweet and salty, soft and crunchy. The recipe book calls them "Cherubs on Horseback."
